Using this as my inspiration, and not seeing the pincho tradition in other tapas bars around Britain I've been to, I wanted to bring this great, sociable and easy way to eat to the streets of West Didsbury, Manchester. For my own personal touch, I've added my name to the name of our tapas bar's inspiration (minus the 'e') and hence we have "Pinchjo's"!
It's taken some time for people to switch on to how fantastic pinchos can be. Naturally, we serve our traditional tapas, but we are also finding people now opting for a range of pinchos to go with their drinks. For those as yet unenlightened, we have recently taken to offering people some pinchos with their main tapas, just to show them some of our own ideas and introduce how it all generally works in Spain. Over there, you grab a plate, pick a few off the bar, then sit or stand with friends. As different fresh pinchos come out, try some more, then pay for how many sticks are on your plate at the end. As more people get switched on, soon Pinchjo's will be the place to come for a whole new way of eating and socialising!
